Betty Injaychock Obituary

Betty Stapp Injaychock, 93, of Givens Estates passed away on June 23, 2020. Born and raised in Miami, FL, Betty graduated from the University of Miami in 1949 where she was a member of the Chi Omega sorority. While attending college, Betty met Ed Injaychock. They married in 1949 and were lifelong companions for 60 years until Ed’s death in 2010. Betty and Ed raised their family in Coral Gables, FL. Betty was a supportive wife over Ed’s many years as a coach and later as assistant principal at Coral Gabes High School. As the children started leaving for college, Betty earned a teaching certificate, and taught for a brief time. After teaching, she settled into the role of working for the mayor of West Miami. In 1981, upon retirement, Ed and Betty served as interim missionaries in Nairobi, Kenya and briefly lived in Sky Valley, GA before relocating to Asheville, NC in 1985. Over their 60 years of marriage, the couple were involved in many Christian ministries in both Coral Gabes and Asheville. They were members of University Baptist Church in Coral Gabes and were members Of First Baptist of Asheville. Betty had a devout faith in God and sought to serve her Savior, Jesus Christ. Betty was preceded in death by her husband Ed Injaychock (2010), and is survived by her son Bob (Debbie) of Cashiers; daughter Peggy (Rex) of Asheville; son Tom (Carol) of Ft. Mill, SC; daughter Carol (Bert) of Evans, GA. She is also survived by eight grandchildren and eight great grandchildren. The family wishes to especially thank the ladies who cared so loving for Betty over the past several months as well as Four Season Hospice.
